I'm just one week in from doing the same thing myself. I had to try and
keep my system "as is" because getting it back to how I need it, for
various reasons, would be nigh on impossible! You're right to shudder..
That said, its all gone really well for me.

Page 4 and 5 were the biggest help for me.
You said that your system is stable and secure at the moment. If that
includes, let's say, DCPP, for gawds sake bolt the doors and uninstall the
bootauth and decrypt the drive before you start.
It should go OK. It's a hairy thing to do but it can be done.
