The Criterion Forum lists the different versions and describes in detail what they contain:
http://www.criterionforum.org/listing.php
The Criterion Dungeon has a nice webpage wich lists all the different prints. (but not giving out any details
of what is different)
http://criterion.mono.net/11984/The%20Criterion%20Collection
Even Wikipedia has some details of different editions:
http://en.wikipedia.org/wiki/List_of_Criterion_Collection_DVD_releases
As to my knowledge, a new Criterion edition has nothing to do with all prints being sold out, but a new
edition is in fact different from the previos one.
Seven Samurai had to be repressed in 2nd edition, because the 1st edition contained a restoration demo that
had to be removed. (legal reasons I think).
Beauty and the Beast exists in two editions. The 1st one being sold a limited time before Criterion lost their
distribution rights to the movie. After they aquired it again they released a 2nd editon.
To my knowledge the 2nd or 3rd editions are superior to the previous releases, but as a collector the
Criterion set is not complete before all the editions of a release is collected :)
