I use VidCoder, with different presets based on media.

For a DVD rip, I have my preset for original resolution (automatic
cropping) anamorphic. That works with PAL or NTSC. I also enable
decombing to deal with interlaced video, set PQ at 20, and enable
subtitles if available.

For Blu-Ray, I modify the settings to get something that would be
around 720p resolutions. That changes with AR. Again, PQ is set for 20.

I've noticed that most posted rips are set for less than original
resolution, and reduced PQ. An hour-long episode tends to be 350MB,
where mine use a variable quality and tend to be closer to 700MB. The
quality difference does show.

Posters also rarely post the extras on the DVD. I like to grab movie
trailers, for instance. They're not important, but they might help when
deciding what to watch on movie night. ;)
