Pre-amble: So I don't have a scanner to test this software on, I used to
have a similar HP all-in-one to yours but since I work in IT I pretty much
do all my scanning and printing at work, to the point that I wouldn't use my
home device for 18 months at a time. When I did go to use it the print heads
would inevitably be fubar from non-use and bamm, there's $100 just to
replace the print head.
So I ended up replacing the inkjet with an el-cheapo laser printer that
doesn't care how long it's been off for as there's no ink or print head
involved, the down side is it is only a B&W printer, so as I said I can't
test the scanning software.

I figured you'd want what I'd be looking for in scanning software though,

I like this one for a few reasons, free and open source, still in
development, looks pretty easy to use and is feature rich. I also had to
laugh because in the screenshots it's connected to an HP 6830! :)
I think the best feature for what you want it for is the Batch Scanning, it
allows you to scan multiple pages and when you're done it will compile all
those pages in to a single PDF, the size of which will be predetermined by
your scanning options (DPI for scanning as images or OCR for searchable
PDFs). As I can't test it I have no idea how accurate/time consuming the OCR
engine is though. In my experience they are often tedious and require a lot
of rework so I just scan as images.

I also liked the Batch Scanning With Fixed Delay option, this means you
don't have to give the application any input during the scanning process, it
will automatically scan after X seconds for a predetermined number of scans,
very handy if the scanner is in a different room to your computer.

Naturally it has all the standard features and settings you'd expect such as
allows you to save multiple profiles, so one for magazines, another for
photos etc etc. Sorting and editing of (multiple) scans before saving blah
blah blah.
If you do decide to check it out let me know if it's any good.
